Typical Ingredients

The menu starts with typical ingredients - basic food stuffs that you'll encounter throughout Spain served just as they are in Spain. A plate of cheese is just that - nothing else.

A glass of sherry is the perfect accompaniment with these, or a chilled beer.

One of the world's most influential wine journalists, USA-based Robert Parker, says "Spain is leading the world in terms of sensational wine bargains that possess considerable character and soul"; a sentiment echoed by respected UK wine writer Jancis Robinson MW, who says "Spain is the most dynamic wine-producing country in the world".

Spain's diverse topography, from continental to maritime, Mediterranean to Atlantic, twisting and turning through rugged valleys and Arizona-like near-desert plains, really develops exciting flavours.

Rooted in this remarkable terroir is a rich heritage of grape varieties. What really gets wine lovers' hearts racing is when they see the wealth of gnarly old dry-grown bush vines that pattern the Spanish landscape. Old vines produce fewer bunches of more highly concentrated, fully-ripe, flavour-packed fruit with an interesting spectrum of flavours.

Where once the remarkable character of these grapes was lost through poor winemaking, Spanish wineries are now kitted out to capture the essence of this old-vine fruit. Forget images of rustic earthen floored wineries; today seriously ambitious, well-qualified, well-travelled winemakers are practising their craft in some of the most technologically advanced, architecturally beautiful wineries in the world.
