Old vines produce fewer bunches of more highly concentrated, fully-ripe, flavour-packed fruit with an interesting spectrum of flavours.
Where once the remarkable character of these grapes was lost through poor winemaking, Spanish wineries are now kitted out to capture the essence of this old-vine fruit. Forget images of rustic earthen floored wineries; today seriously ambitious, well-qualified, well-travelled winemakers are practising their craft in some of the most technologically advanced, architecturally beautiful wineries in the world.
