LI TONG – Global Champion, 2017 Patrón Perfectionists Global Cocktail Competition


The cocktail I have created is in honour of an adventurous girl, one who went against the wishes of her traditional Chinese family and instead of marrying a good husband and settling down, decided to set out on her own in the world to become an expert bartender.

In Chinese culture, life is about keeping a good balance of Yin and Yang, which is why this cocktail uses calming ingredients such as

Chamomile and YUZU which is packed full of vitamin C.

The blue agave in Patrón Reposado takes seven years to grow, and it is this patience and persistence that form the heart of my cocktail... to be an inspiration to everyone to keep chasing their dream.

That adventurous girl is me and I feel as happy as a dancing bee.

  • 2 oz Patrón Reposado
  • .75 oz Lime juice
  • .5 oz Passion fruit syrup
  • .25 oz Yellow Chartreuse
  • Dash of soda water
  • 1 oz Chamomile yuzu shrub
    • 200 ml Yuzu puree
    • 200 g Sugar
    • 50 ml Apple cider vinegar
    • 200 ml Water
    • Several pinches of dried chamomile


  1. Combine chamomile yuzu shrub ingredients
  2. Add in all ingredients except soda water to a Boston shaker
  3. Add ice to shaker
  4. Shake and strain into a Nick and Nora glass
  5. Top with soda water
